Heat 2 teaspoons of oil in a large skillet over medium heat. Add the onion and apple and sauté, stirring frequently, for 3-4 minutes. Add the sage, sea salt, and cinnamon and continue to cook until onion is just translucent and apple is soft. Transfer mixture to a large mixing bowl to cool. Turn off the heat and wipe out the pan. Once mixture is cool enough to handle, add the ground turkey and mix gently until well combined. Using clean hands, lightly press the mixture into 12 patties. Reheat the skillet over medium heat and add the remaining oil. Sauté the patties in batches to avoid over-crowding, approximately 3-4 minutes per side. Serve immediately or cool and freeze in freezer bags.
